Yiu Goh is the dim sum chef at Three Minus One Restaurant in Sai Wan. The restaurant has been running in Hong Kong for about 30 years and is owned and run by several shareholders. It provides good, cheap food to local residents and opens from 5 am to 3 pm. Yiu Goh's working day starts at about 3 am.
